Lemon and Herb Nandos Recipe

Grilled ยท Mild ยท Zesty & Juicy
Ingredients:
- 4 chicken thighs or drumsticks (skin-on, bone-in or boneless if preferred)
- Salt & pepper
- 1 tbsp olive oil (for grilling)
For the Lemon & Herb Marinade:
- Juice & zest of 1 large lemon
- 2 tbsp white wine vinegar
- 3 garlic cloves, minced
- 1 small red chili (or ยฝ tsp chili flakes)
- 1 tsp smoked paprika
- ยฝ tsp dried oregano
- ยฝ tsp dried thyme
- ยฝ tsp cumin
- ยผ tsp ground coriander
- 1 tsp salt
- 2 tbsp olive oil
- Handful of fresh parsley and coriander, chopped
Instructions:
- Marinate the Chicken
In a blender or bowl, mix all marinade ingredients. Marinate chicken overnight or at least 30 minutes before cooking. - Cook the Chicken
- Grill: Preheat grill to medium-high. Brush with oil. Grill chicken for 5โ7 minutes per side, until charred and cooked through.
- Oven: Bake at 200ยฐC (390ยฐF) for 25โ30 minutes, then broil for 3โ5 minutes for color.
- Pan: Sear on high heat, then lower and cook until done.
- Serve
Garnish with lemon wedges, fresh parsley, and extra sauce if saved. Pair with spicy rice, corn, or a crunchy slaw.
