Ingredients

  • 4 large potatoes, peeled and cut into chunks
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried blended herbs (which include thyme, rosemary, oregano) or 1 x tbsp Nando’s Garlic & Herb Flavour Shaker
  • 1 teaspoon garlic powder Salt and black pepper to taste
  • fresh chopped parsley (for garnish, optional)
  • 2 x tbsp Nando’s Mild PERinaise

Directions

  • Begin by preheating the oven to 200°C.
  • Peel the potatoes and cut them into quarters or thirds if they are small.
  • Place the oil on a large baking tray and heat it in the oven.
  • Boil the potatoes in a saucepan with salted water for 12-15 minutes until tender, then drain in a colander and shake before adding to the tray.
  • Ensure the potatoes are evenly coated in oil, then bake for 35 minutes until golden and crisp, flipping once. Sprinkle with Garlic & Herb Flavour Shaker at the 30-minute mark, toss, and return to the oven for an additional five minutes.
