Ingredients

  • 1 cup long grain rice (washed)

  • Optional: squeeze of lemon for zest

  • Pinch of ground coriander – boosts the citrusy aroma
  • 1 tsp tomato powder – deepens the savory flavor and enhances the red color

Instructions

Sauté the Base
In a large pan, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Add garlic and cook for another minute.

Spice It Up
Add the chopped bell peppers and all the spices—paprika, turmeric, cayenne pepper, and cumin. Stir for 2–3 minutes until fragrant.

Add Rice & Stock
Stir in the washed rice, coating it in the spice mixture. Pour in the stock and bring to a boil.

Simmer
Reduce heat, cover, and simmer for 15 minutes or until the rice is tender and liquid is absorbed.

Fluff & Serve
Fluff with a fork, season to taste with salt and pepper, and garnish with fresh coriander and a squeeze of lemon.
