- four cloves of garlic, minced
- one lemon (juice and zest)
- 1/2 cup olive oil
- two tablespoons of red wine vinegar
- two tablespoons paprika
- one tablespoon of smoked paprika. Use 1-2 red chillies in the marinade, but you can increase the amount based on how spicy your dish is.
- one teaspoon of dried oregano
- one teaspoon of peri peri salt
- one teaspoon of black pepper. Include one tablespoon of brown sugar in the marinade if you prefer sweetness.

Put the minced garlic, lemon juice, and zest into a blender, along with olive oil and red wine vinegar. Add both types of paprika, chopped red chillies, oregano, peri peri salt, pepper, and brown sugar before blending until smooth.
